There are two chickpea recipes in AFR I’m a little obsessed with and this is one of them. (The other one is the 40 Clove Chickpeas, which actually uses 10 cloves of garlic, not 40 and it’s awesome and amazing.) I like making this dish for two main reasons: 1) it’s delicious and 2) I don’t have to think about the rest of the meal. We always serve it the same way: on top of mashed potatoes and sautéed spinach. I somehow managed to forget to add the lemon juice and capers at the end of the cooking time, but it was still really good. It seems like a fancy-pants meal, but it’s actually pretty simple and makes a really hearty weeknight meal. (and the leftovers are perfect lunches that will make your coworkers jealous…)
