We grabbed a copy of Dining with Friends at the SF Veg Fest (and it’s signed by Priscilla and Lee!) and I’ve loved everything we’ve made so far. I’ve been eyeballing this recipe for a few weeks and was glad I had a good night to make it. It does take a little time, but most of it is simmering the lentils and then baking the casserole. The ingredient list is mostly things you probably have already – carrots, onions, lentils, diced tomatoes – you get the idea. It’s really tasty and I loved the breadcrumb topping. Also, it makes the most amazing lunches! Seriously. Seth wanted me to be sure to mention how well it keeps and reheats for lunch. The recipe says it makes about 4-6 servings, but I think we got more like 7-8 out of it. Seriously. I just steamed some broccoli and tossed it with sautéed onion and garlic for an easy veggie side. Easy peasy.
