I was going to make the Lo Mein recipe in Everyday Happy Herbivore, but I liked the marinade I made for the tofu so much, I decided to use that as sauce for the noodles instead. Nothing against the HH recipe, I love it, but I figured since it was already made, there was no sense in making another sauce. I mixed together tamari, mirin, rice vinegar, garlic, ginger and a tiny splash of chili oil for the marinade and let the tofu soak a full 24 hours. I also dry-fried it before putting in the marinade. I baked it while I prepped the veggies and noodles. The veggies this time were the usual suspects – broccoli, bell pepper, shallots, garlic, green onions and a special guest star of snow peas. Not any kind of fancy dinner, but tasty and easy for a weeknight.
