Generally speaking, Seth is in charge of making nachos around here. He just does a better job than I do. He also makes amazing salsa and guacamole. I don’t like guac unless he made it. No one else does it right. Anyway, we’d actually planned to make these on Saturday, but ended up having a pretty large late afternoon snack while walking around the neighborhood so we really didn’t need dinner and moved the nachos to Sunday dinner instead. We don’t play around with nachos – they must be loaded. And I mean loaded. It’s a miracle the chips hold up under the weight. This time we had a bunch of yumminess: pinto beans, Upton’s Naturals Chorizo seitan, the leftover fajita veggies, lettuce, tomato, guac, and of course, Daiya Havarti. These were totally the best nachos ever. Seriously.
