This Sunday brought us another pot luck. This one was hosted by our friend David and his wife Luce, and was “Plant Strong” meaning the recipes everyone made were free from oil and used very little (if any) added salt. Since the potluck was at a park picnic shelter, we decided to grill some veggies. No. We didn’t put them right on the grate that people use to cook meat – that’s gross - we brought a flat grill of our own and used it in the brick grill at the park. I made a simple marinade of white wine, balsamic vinegar, garlic and herbs. We had more squash - of course – and picked up some mini bell peppers. It all came out really good. The others brought a bean & mango salad, corn on the cob, kale salad, rice, BBQ tofu, berry salad and cookies. Everything was so yummy. I know a lot people don’t think of healthy food as being very tasty, but it really is!
