We had some peppers on hand from the last CSA pickup that we really needed to use and a few flour tortillas too, so I decided to make some fajitas. While we try not to eat a lot of processed foods, I usually keep a package of Beyond Meat (grilled flavor) in the freezer in case we need something we can cook quickly. I was going to make a batch of seitan, but Seth said he felt like the not-chicken, so we went with that. Personally, I think it’s pretty bland as is, so I like to marinate it for stuff like this. I didn’t really use a recipe, but mixed up the some beer, garlic, cumin and oregano and let it sit for a few hours. Then, I just stir-fried it along with the onions and peppers. We chopped up some lettuce and tomato to top them with. I’d meant to get an avocado, which I’m learning to love despite years of loathing on my part, but I forgot. A simple side of yellow rice with garlic from the Viva Vegan book rounded it out. It’s really our favorite rice and we make it all the time, with extra garlic, of course.
